Martha's brown rice salad

'Martha Goes Green' is a great little cookbook that my friend once lent me, warning me that the brown rice salad can lead to obsession, of course I made that recipe first.
And then ate it almost every day for a month.
It's pretty damn tasty, plus you can shake it up and make it really exciting. Have no money? Preaching to the choir sister. Try putting all those leftovers in your fridge into it and pretend you're being quirky.

Ingredients:

Cup of brown rice
1/2 cup of corn kernels
2 celery sticks, thinly sliced
1/2 cup raisins
1/2 cup pumpkin seeds
1/3 cup parsley, chopped

For the dressing:

1/2 cup olive oil

2 tbs balsamic vinegar
1 glove garlic, minced
1 tbs agave syrup
1 tsp curry powder
Squeeze of lemon juice
Salt and pepper

How to:

Put the brown rice on first because it takes forever to cook. 1 cup of rice = 2 cups of water.

For the dressing, just add all the ingredients together into a little jar, screw on the lid and give it a good shake. Leave it there to marinate.
Soak the raisins in boiling water for about 5 or 10 minutes until they expand and go soft.
Put all the other salad ingredients into a big mixing bowl, add the raisins, the cooked brown rice (don't forget to cool it done first) and the salad dressing. Mix them all together.

Good luck with your new found food addiction.

Tofu & Zuchini Fritatta

Feeling like I've been missing out on a few of my old favourites lately, I decided to have a crack at making a vegan fritatta.
"Wooooooooah crazy" You say, "You can't do that! Friatta is an egg based dish".
Well, time to shake shit up a bit, I say. The tofu gave it all the 'frittata' texture it needed and the tahini and nutritional yeast gave it that 'eggy' taste y'all crave.
All in all, very chuffed with myself. 10 life points.

Tofu & Zuchini Frittata

Ingredients:

1 tbs olive oil
1 red onion, diced
5 small potatoes, sliced
1 zuchini, grated
half a bunch of green onion, chopped
small handful of chives, diced
500g Silkin tofu
1 tbs tahini
2 tbs nutritional yeast
1 tbs soy sauce
1 tsp smoked paprika
salt and pepper

Directions:

Preheat the oven to 200 degrees and grease a 20 x 30cm dish.
Cut the potatoes into thin circles and boil in water until tender but not too soft. Drain the potatoes and set aside. Heat a frying pan with 1 tbs olive oil, add the cooked potatoes and onion and fry until just golden.
In a large bowl mash the tofu with a fork, then add all other ingredients and mix together.
Place the fried potatoes and onions evenly on the bottom of the greased dish, add the tofu mixture on top and press down firmly.
Bake for 40-45 minutes until firm and golden on top.

Easy, simple and healthy.

Once you start baking you can't stop...

Since my Pumpkin Loaf turned out so well I decided to have another crack at making a loaf.
Plus I was hungover and the idea of baking seemed a lot more appealing than leaving the warm comforts of my home to find something yummy to eat.

I'd been looking at Applesauce cake recipes, which seemed to contain ingredients that I had in the kitchen, but they all looked soo dull. I decided to spice it up a bit by adding some walnuts and coconut flakes to give it a bit more texture and pinch or two or three of cinnamon, and it came out delish. Thankfully it tasted a tonne better than it looked because I forgot to grease the baking tin and it got a little bit stuck...

Walnut and Cinnamon Loaf

Ingredients:

1 1/2 cups all-purpose flour
2 tsp baking soda
1/4 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp ground ginger
3/4 cup sugar
1/2 cup vegetable oil
1 banana, mashed
1 cup of apple sauce
1 cup of walnuts, lightly toasted
1/3 cup of flaked coconut

Instructions:

Preheat oven to 170 degrees.
Sift the flour, baking soda and salt into a bowl, add the spices and mix together.
In a separate bowl, whisk the sugar and vegetable oil until well combined. Add the mashed banana and the apple sauce to the oil-sugar mixture and... mix.
Add the dry ingredients to the mixture and slowly combine. Careful not to over mix or it will go all stodgy and gross. Then add the walnuts and coconut and fold in.
Pour into a greased standard loaf pan and bake for 50-55 minutes. Leave to cool and then BAAM! one and half hours later, you're ready for your hangover food.

Serve with a coffee for best results.
