Once you start baking you can't stop...



Since my Pumpkin Loaf turned out so well I decided to have another crack at making a loaf.
Plus I was hungover and the idea of baking seemed a lot more appealing than leaving the warm comforts of my home to find something yummy to eat.


I'd been looking at Applesauce cake recipes, which seemed to contain ingredients that I had in the kitchen, but they all looked soo dull. I decided to spice it up a bit by adding some walnuts and coconut flakes to give it a bit more texture and pinch or two or three of cinnamon, and it came out delish. Thankfully it tasted a tonne better than it looked because I forgot to grease the baking tin and it got a little bit stuck...


Walnut and Cinnamon Loaf

Ingredients:

1 1/2 cups all-purpose flour
2 tsp baking soda
1/4 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp ground ginger
3/4 cup sugar
1/2 cup vegetable oil
1 banana, mashed
1 cup of apple sauce
1 cup of walnuts, lightly toasted
1/3 cup of flaked coconut

Instructions:

Preheat oven to 170 degrees. 
Sift the flour, baking soda and salt into a bowl, add the spices and mix together.
In a separate bowl, whisk the sugar and vegetable oil until well combined. Add the mashed banana and the apple sauce to the oil-sugar mixture and... mix.
Add the dry ingredients to the mixture and slowly combine. Careful not to over mix or it will go all stodgy and gross. Then add the walnuts and coconut and fold in.
Pour into a greased standard loaf pan and bake for 50-55 minutes. Leave to cool and then BAAM! one and half hours later, you're ready for your hangover food.

Serve with a coffee for best results.
