Lavender Chocolate Chip Cookies

The smell of these pretty little cookies cooking is wonderful. Lavender and chocolate was wafting around the kitchen while Edith Piaf was playing on the stereo. Yes it really was. (Everyone has there own personal favourite baking music and mine happens to be either Edith Piaf or Billie Holiday, Ok?)


It made me feel a little nostalgic.


Interesting fact, the term nostaligia describes a yearning for the past, often in idealised form. The word orginated from the Greeks (surprise, surprise), consisting of νόστος(nóstos), meaning "homecoming" and ἄλγος (álgos), meaning "pain, ache".
Which is a fairly accurate description since I don't really recall smells of lavender and chocolate wafting around our kitchen as a child and I don't believe my parents were great fans of 1950's jazz.


These cookies can be adapted to almost any flavour you're craving as the not-so-secret ingredient is flavoured chocolate. 'Seed & Bean' has a wide selection of vegan chocolate, including lavender.

Lavender Chocolate Chip Cookies

Ingredients:

2 cups flour
2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
85g block of chopped up Seed & Bean lavender chocolate
1 cup raw sugar
1/2 cup vegetable oil
1 teaspoon vanilla
1/4 hazelnut soymilk

How to:

Preheat oven to 170 degrees. Sift flour, baking powder, salt and cinnamon into a bowl, add chocolate pieces. Mix together and create a well in the middle of the bowl.
In another bowl combine the vegetable oil with the sugar and mix well. Add the vanilla and hazelnut soymilk and mix before adding to the well of the dry ingredients.
Mix well but make sure not to over mix it.
Roll into small balls and place on a baking tray. Press down on each ball it a fork and place in the oven for 12-15 minutes.
