That's not necessarily a bad thing actually, at least I moved my obsession from Spanish men to food. Probably a healthier hobby.
In Spain, culture and food is so closely entwined, so I like to try and make vegan versions of traditional dishes almost as if to prove that tradition and culture can stay the same but without harming any animals in the process.
Todays dish is a spin on the traditional 'Tarta de Manzana', with a crumble top.
Tarta de Manzana
Ingredients:
For the base:
100 grams margarine
1 1/2 cups flour
A little water if needed
For the filling:
2 apples
1 tsp cinnamon
2 tbs agave nector (or sugar)
A little water
For the crumble:
80 grams margarine
1/2 cup raw sugar
1/2 cup flour
Instructions:
Heat the oven to 180 degrees and grease a shallow tin.
Add all the ingredients for the base together, it should make a semi firm dough, just use your instincts about how much water, if any, is needed.
Line the base of the tin with the base and place in the oven for ten min.
While the base is cooking, slice the apples very thinly and cook in a frying pan with the water, agave and cinnamon, the water should only just cover the apples, you don't want to cook them too much, just until tender and the water has dissolved.
Pour the apple mixture on top of the base.
Mix the crumble mixture together and sprinkle on top of the apples, place in the oven again until the top is lightly browned.
