The easiest recipe I've ever had the pleasure to meet

Blueberry Muffins. Nom nom. And so simple to make.
I have a confession, when I'm looking for a good recipe I look at two things, firstly, do I have all or most of the ingredients in my house and secondly, how easy is the recipe. Do I have to soak half the ingredients or stand on my head and say the alphabet backwards to make the muffins rise?
And so, when I met my new favourite recipe on http://www.livevegan.org, I knew we would get on immediately. Simple, cheap and fancy free. Enjoy.

Ingredients:


1/4 cup margarine, softened 
1/2 cup unsweetened applesauce 
1/2 tsp. salt
1 cup sugar 
2 cups flour
1 Tbs. baking powder
1 tsp. vanilla 
1/2 cup soy or rice milk 
2 cups blueberries (frozen is fine)

How to:

Preheat oven to 170 degrees. Line muffin cups with paper liners
Mix all ingredients together until moistened. Seriously. That's it. Just mix them all.
Spoon the mixture into muffin cups, and bake for 35 minutes.
