Scones - ENGLAND

Today it was such a beautiful sunny day, I went for a walk down the canals to feed the ducks, it felt like such a lazy Sunday day (yes I'm aware it's Friday), that I decided scones and jam for lunch would be perfect. The weather here in Scotland doesn't stay sunny for long so we had an afternoon picnic inside with fresh mint tea and Turkish jam my friend brought back from Istanbul.

SCONES - ENGLAND


Ingredients:

3 cups flour
2 tsp baking powder
pinch of salt
50 gram margarine
about 1/4 cup of soy milk
1 tsp vanilla extract - optional
1/2 tsp cinnamon - optional

Instructions:

Heat oven to 180 degrees. Sift flour and baking powder, add salt, then rub into butter, if you want to add anything extra like vanilla and cinnamon or chopped dates, add milk and knead into a soft dough, divide and shape into 6 - 8 scones, place on a tray and bake for 12 minutes until brown. Serve with jam, tea and friends.
