Now for something healthy...

Vegan Baking is fun, but all that taste-testing is a dangerous past time, so I'm now dedicating my time to trying new and exciting... Salads! Hurrah!

The other day I went out and bought a tonne of Kale and began some new and healthy creations. Now for those that don't know anything about Kale, it's absolutely amazing for you, dubbed the dieters dream food (move over celery!), one cup of Kale contains 36 calories and zero fat! Further more, one cup contains over 20% of your recommended daily intake of fibre. It's full of well-known antioxidants like vitamin C, vitamin A, and manganese, loaded with omega-3 fatty acids and vitamin K and is a cancer preventative and fighter.

Wow. Super food right? And that's not even all the benefits from Kale, I just got sick of writing them all!

Kale, Chickpea and Quinoa Salad


Dressing:

1 tsp lemon rind
1 tbs lemon juice
pinch of ground cumin
2 tbs red wine vinegar
1/2 cup olive oil
salt and pepper

Salad:

1 cup chickpeas (soaked and cooked or from the can)
2 large carrots, grated
large bunch of kale, blanched
1/2 small head of red cabbage, shredded
1/2 cub raisins
1/2 cup quinoa, cooked

Directions:

Mix all the dressing ingredients together and set aside.
Cook quinoa and set aside to cool. Bring a pot of water to the boil, add the kale and blanch for 10-15 seconds until bright green, quickly remove and immediately rinse with cold water, lay the kale on a tea towel and pat dry.
In a large bowl add the cooked quinoa and kale, the grated carrot, shredded cabbage, chickpeas and raisins and mix together. Add the desired amount of dressing and serve.
